Pecan Varieties Sold
Schley
The most sought after variety is the Schley. A paper shell pecan with very high oil content which gives it a delicious flavor. But with the superior taste comes the requirement to guard them close and ensure that they are kept in a refrigerator or freezer. They will be the first to turn if not preserved well.
Stuart
The Stuart pecan variety is your basic, All-American pecan. This is an old variety that is prominent throughout the Southeastner United States. A very hard shell pecan, it produces beautiful halves that are wonderful for eating raw or baking.
Cape Fear
My personal favorite variety is the Cape Fear. Also a delicious pecan with a superb, nutty flavor. I am always amazed at how so many of these pecans are perfect and shell out almost exclusively as halves. Besides tasting good they are simply a beautiful pecan.
Grey Park Giant
We also have an interesting variety of pecan that was purchased from a nursery in Arlington, Texas. It’s called a Grey Park Giant named by its originator, Mr. O. S. Grey. This is also a large paper shell pecan. It is slightly smaller than the Desirable but much easier to grow and produces a higher percentage of top quality halves.
Desirable
The pecan variety known as Desirable is a very large paper shell. Because to its size, it is often used by chefs to decorate baked goods. It is a tasty nut. But it is difficult to grow and demands ample extra work to produce a high quality nut.
Frotcher
The oldest variety of pecan harvested on our farm is the Frotcher. These trees date back to the late 1800’s. We still have 5 of them on the farm. Year after year, these old trees still produce large quantities of this particular pecan. Admittedly, the nut is not the most attractive pecan to view. It has black, hair like veins, that run the length of the nut which makes them less appealing to the eye. But they are a sweet delicious nut and probably my second favorite behind the Cape Fear.
Lastly, we have seedlings, also known as natives. They aren’t a variety of pecan and are produced by pecan trees that were never grafted to a particular variety. These nuts are small and hard which requires additional labor to process. Most of the nuts do come out as halves. They also are often sought after by chefs to cook decorative bake goods.
